Shawntele's Birthday and A Valentine Meme, oh my!

So yesterday was my 36th birthday, some would say I am young pup, and yet others (like my little brother)think I am over the hill. Well let me assure that I am neither. I am exactly the perfect age, at the perfect place, right where God wants me to be. Besides, according to my Wii Fit, which my family bought me for my birthday, I am actually 26, so there!Photobucket


Anyway, I love memes, they give me something to type without having to think too hard. Since I have yet to be tagged by someone, I have taken it upon myself to tag ME. And guess what? If you are reading this right now, you're it! Photobucket

♥ How long did you know each other before you started dating? about 2 hours!

♥ Who asked who out? it was just one of those things that happened

♥ How old are each of you? I am 36, DH is 47

♥ Whose siblings do/did you see the most? definitely mine, although that is not very often

♥ What about pets? No pets, but if the kids had their way we would have many!

♥ Did you go to the same school? no

♥ Are you from the same home town? No, but we were born in the same province.

♥ Who is the smartest? I am smarter, and DH would agree.

♥ Who is the most sensitive? I would say we are both fairly equal.

♥ Where do you eat out most as a couple? We usually eat out as a family, but on the rare occurrence when it is the two of us he lets me pick and I always choose Applebee's.

♥ Where is the furthest you two have traveled together as a couple? a spa resort in Florida

♥ Who has the worst temper? Is this a fair question? I would say it used to be him, but now it is me.

♥ Who does the cooking? I do, I am always trying to come up with different recipes for him to try. He is not picky like the kids!

♥Who is the neat freak? He is the organized freak, I am the clean freak.

♥ Who is the more stubborn? Again, I am.

♥ Where was your first date? Hmmm, not sure we even had one, we just looked at each other and moved in together...GASP!

♥ Who has the bigger family? He has the bigger immediate family, I have the bigger extended family~ too many to keep track of.

♥ Do you get flowers often? When we first started dating I got them all the time, now I just see them as a waste of money. Although they are beautiful, I would rather he spend our money elsewhere.

♥ How do you spend the holidays? Just the five of us together, doing whatever we want.

♥ How long did it take to get serious? Two hours...

♥ Who’s better with the computer? I am!

♥ Who drives when you are together? He does, although I would like to; I love my truck! He is very thoughtful though, he doesn't move the seat or the mirrors. :)

My Recipe Collection ~ Coconut Macaroons

I have a huge collection of recipes, some from when Little Man was a baby (he is now 14!) Photobucket I hoard them. I decided that it is time to weed through them all, actually cook them (wink,wink) and by vote of my family the recipe will get tossed or copied in a more permanent place.

Coconut Macaroons

Ingredients:
~14 oz sweetened shredded coconut
~14 oz sweetened condensed milk
~1 t. vanilla extract
~2 extra-large egg whites at room temperature
~1/4 t. salt

Directions:
~Preheat the oven to 325 degrees F.
~Combine the coconut, condensed milk, and vanilla in a large bowl.
~Whip the egg whites and salt on high speed in the bowl of an electric mixer until they make medium-firm peaks.
~Carefully fold the egg whites into the coconut mixture.
~Drop the batter onto sheet pans lined with parchment paper using 2 teaspoons.
~Bake for 25 to 30 minutes, until golden brown.
~Cool and serve.

*watch closely towards the end of cooking time, they brown quickly!

Follow these instructions:
~ Relax and concentrate on the four small dots in the middle of the picture for about 30 - 40 seconds.
~ Now, take a look at a wall nearby (a smooth, single colored surface).
~ You will see a circle of light developing.
~ Blink your eyes a couple of times and you will see a figure emerging...
~ What, or shall I type who, do you see?

Blogger Wanna Be

I really love the idea of having this blog to keep an account of the gazillion random thoughts that go through my head each day...I think of things and think to myself "That would be a great thing to write about!" But then life happens...

And I truly haven't decided what I want this blog to be a reflection of, other than me. Should it be a diary of my life to share with family and friends...maybe not a good plan...I like the idea that I could pass you someone in the library foyer and they could have by chance just read my bog that day...mysterious, don't you think? Should I keep a journal of all the terrific things my kids say and do? Without revealing too much personal info, of course...that could get creepy...maybe a homeschooling record of all the things we do, and the things we plan to do, and the things we should have done, but didn't...lol
